Spaghetti with Red Clam Sauce or “spaghetti con vongole” as it is known in Italian is a quick and easy meal and a great switch from regular pasta. All the ingredients can be purchased in advance and be part of your kitchen pantry.

1 Garlic Clove
2 Tablespoons olive oil
2 fresh tomatoes peeled & chopped (we substitute 1 can of stewed chopped tomatoes when fresh is not at hand.)
1/2 cup minced parsley
salt
Freshly ground pepper
2 cans (71/2 oz. each) of Snow’s minced clams.
8 ounces spaghetti
1/4 c sliced black olives (optional)
Grated Parmesan cheese
Side dish: Crostini Alla Mozzarella (Mozzarella Skewers)
